Pork Carnitas Burrito Bowls

This was my latest Sunday meal prep adventure. I love anything/everything Mexican inspired, but was in the mood for something other than my main staple protein - chicken. These super easy pork burrito bowls were so simple to make, thanks to the use of the slow cooker, and they sure packed a flavorful punch all week for lunch!

Ingredients:
  • 1 pound pork loin
  • 3 cloves garlic, minced
  • juice from 2 limes
  • 3 tsp cumin
  • 2 tsp paprika
  • 4oz can of diced green chiles
  • salt and pepper, to taste


Instructions:

1) Place the pork in the slow cooker with the minced garlic. Cook on high for 2-4 hours, or until the pork is able to be shredded easily.

2) Shred the pork and place it into a large bowl. Add the rest of the ingredients and mix well.

3) To assemble the bowls, divide Cilantro Lime Rice, Street Corn, black beans, and pork evenly among the number of containers you have. Serve with lime wedge (optional).
