Cilantro Lime Rice

This dish can easily be used as a side dish for any Mexican inspired meal, but it works best in the Pork Carnitas Burrito Bowls.

Ingredients:
  • 4 cups water
  • 2 cups rice of your choice
  • 1 lime
  • 1/2 cup fresh cilantro, chopped
  • 1 tsp sea salt
  • 1 tsp garlic, minced

Instructions:

1) Cook rice according to the instructions on the package.

2) Transfer cooked rice to a medium bowl and allow to cool for about 20 minutes.

3) Squeeze the juice from the lime onto the rice and mix well. Then add the remaining ingredients and stir to incorporate.
