Harvest Hash

I love one-pot meals because they are quick & easy to make on a busy weeknight. And the ease of cleanup is an added bonus. The sweet and spicy flavors in this dish go so well together and it's a great use of your pre-made pork meatballs.

Ingredients:

  • 2 tbsp coconut oil or ghee
  • 1 apple, peeled, cored, and diced
  • 1/2 tsp salt
  • 1/4 tsp ground cinnamon
  • pinch of black pepper
  • pinch of nutmeg
  • pinch of paprika
  • 2 cups sweet potato, diced
  • 1 portion spicy pork meatballs (cut in half if they are large)
  • 3 green onions, green parts only, thinly sliced
  • 1/3 cup roughly chopped pecans or walnuts
  • 1 bag (5oz) baby spinach




Instructions:

1. Heat 1tbsp coconut oil in a large skillet over medium heat. When melted, add the apple, sweet potato, and salt and cook until they are tender and golden, about 7 minutes.

2. Meanwhile, stir together in a small bowl the cinnamon, black pepper, nutmeg, and paprika. Set aside.

3. Once the apple and sweet potato are browning, add the remaining 1tbsp of coconut oil to the skillet. Sprinkle the spice mixture over top and stir to incorporate the oil and spices.

4. Add the meatballs and continue to cook, until browned slightly, roughly 5 minutes.

5. Add the green onions and nuts and toss to combine.

6. Finally, add the spinach for the last minute of cooking and stir everything to wilt the spinach. Serve immediately.
