Spicy Pork Meatballs

This is a really easy recipe to make from which you can make several other versatile recipes afterwards. This will make a large batch, so freeze the meatballs in about 3-4 servings to pull out for an easy weeknight meal.

Ingredients:

  • 4 lbs ground pork
  • 2/3 cup minced fresh parsley
  • 4 cloves garlic, minced
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 tsp red pepper flakes
  • 1/4 cup warm water
  • 2 tsp cream of tartar
  • 1 tsp baking soda

Instructions:

1. Preheat oven to 425. Line two large rimmed baking sheets with parchment paper.

2. In a large bowl, combine the pork, parsley, garlic, salt, black pepper, and red pepper flakes. 

3. In a separate bowl, mix the water, cream of tartar, and baking soda.

4. Add the water mixture to the pork mixture and mix to combine. Shape into 1 inch balls (I use a melon baller for even sized meatballs). Place the meatballs on the baking sheet and bake for about 20 minutes. Halfway through rotating, rotate the baking sheets from top to bottom shelf. 

5. Divide the meatballs into 3 even portions and freeze for later use.
