This is a great meal for those nights when things are hectic after
work….you know, when you have meetings, extracurricular activities, sports,
etc. You can even use pre-chopped frozen veggies to make this dish even simpler
than it already is. Begin with this Marinade recipe for the meat.

Ingredients
- ¾lb boneless sirloin steak (cut into strips), marinaded
 - 1 cup frozen edamame
 - 3 tbsp water
 - 1-2 chopped bell peppers (can use a package of frozen, pre-chopped peppers)
 - 1 tsp minced garlic
 
Instructions
- Heat a large nonstick skillet over medium-high heat and add olive oil. Add the steak strips and cook 5-7 minutes or until the steak is done. Transfer to a plate.
 - Add edamame and water to the pan that you cooked the meat in and stir fry for 2-3 minutes, or until thoroughly heated. Add bell peppers and cook an additional 2-3 minutes. Add garlic and stir to combine.
 - Return the beef to the vegetable mixture and mix well. Serve over brown rice or quinoa.
