Edamame & Steak Stir Fry



This is a great meal for those nights when things are hectic after work….you know, when you have meetings, extracurricular activities, sports, etc. You can even use pre-chopped frozen veggies to make this dish even simpler than it already is. Begin with this Marinade recipe for the meat.

Cook time:  15 mins
Total time:  30 mins

Ingredients
  • ¾lb boneless sirloin steak (cut into strips), marinaded
  • 1 cup frozen edamame
  • 3 tbsp water
  • 1-2 chopped bell peppers (can use a package of frozen, pre-chopped peppers)
  • 1 tsp minced garlic
Instructions
  1. Heat a large nonstick skillet over medium-high heat and add olive oil. Add the steak strips and cook 5-7 minutes or until the steak is done. Transfer to a plate.
  2. Add edamame and water to the pan that you cooked the meat in and stir fry for 2-3 minutes, or until thoroughly heated. Add bell peppers and cook an additional 2-3 minutes. Add garlic and stir to combine.
  3. Return the beef to the vegetable mixture and mix well. Serve over brown rice or quinoa.
