Ingredients:
- 2-4 boneless, skinless chicken breasts
- 1/4c almond flour
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- 1/4 tsp sea salt
- 1/2 tsp baking powder
- 2 tbsp grated parmesan cheese
- 1 large egg white
- 1 tbsp olive oil
- 2-3 medium zucchini, spiralized
- Easy Marinara Sauce
Instructions:
- Preheat oven to 425
- Combine almond flour, onion powder, paprika, garlic powder, black pepper, cayenne, oregano, thyme, sea salt, and baking powder in a shallow dish. Mix well. Set aside.
- Break egg white into a separate shallow bowl.
- Dip each chicken breast in the egg white and then into the spice mixture until coated evenly. Set aside.
- Heat oil in a large oven safe skillet. Once hot, add chicken breast and cook for 3-4 minutes. Turn chicken. Place a spoonful of sauce on each chicken breast.
- Place skillet in the oven and bake for 10-12 minutes or until chicken is fully cooked.
- While chicken is cooking, saute zucchini noodles in a skillet and heat sauce in a small saucepan.
- Assemble plate as follows: zoodles, sauce, chicken, shredded mozzarella cheese (optional).
