Chicken Parmesan over Zoodles

This recipe is a healthified alternative to chicken parmesan. The breading on the chicken is delicious and can be used as a breading for other chicken recipes.

Ingredients:

  • 2-4 boneless, skinless chicken breasts
  • 1/4c almond flour
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/4 tsp sea salt
  • 1/2 tsp baking powder
  • 2 tbsp grated parmesan cheese
  • 1 large egg white
  • 1 tbsp olive oil
  • 2-3 medium zucchini, spiralized
  • Easy Marinara Sauce



Instructions:
  • Preheat oven to 425
  • Combine almond flour, onion powder, paprika, garlic powder, black pepper, cayenne, oregano, thyme, sea salt, and baking powder in a shallow dish. Mix well. Set aside.
  • Break egg white into a separate shallow bowl.
  • Dip each chicken breast in the egg white and then into the spice mixture until coated evenly. Set aside.
  • Heat oil in a large oven safe skillet. Once hot, add chicken breast and cook for 3-4 minutes. Turn chicken. Place a spoonful of sauce on each chicken breast.
  • Place skillet in the oven and bake for 10-12 minutes or until chicken is fully cooked. 
  • While chicken is cooking, saute zucchini noodles in a skillet and heat sauce in a small saucepan.
  • Assemble plate as follows: zoodles, sauce, chicken, shredded mozzarella cheese (optional).
