Crispy Spicy Turkey over Cauliflower Rice

We haven't made a Whole30 meal so far that we haven't enjoyed. Here we have some very basic ingredients turned into a flavorful combination. This is a quick & easy meal, perfect for any busy weeknight!

Ingredients
  • 1lb ground turkey
  • 3/4tsp salt
  • black pepper
  • 2 tsp paprika
  • 1 tsp cumin
  • 1 tsp red pepper flakes (use less if you like less spice)
  • 3 tbsp coconut oil
  • 3 cloves garlic, minced
  • 1 head of cauliflower, cut into florets
  • 2 tbsp coarsley chopped almonds
  • 2 tsp grated lemon zest
  • mint for garnish (optional)




Instructions

1. In a large bowl, combine turkey, 1/2tsp salt, and black pepper to taste. Shape the turkey into 2 large patties.

2. In a small bowl, combine the paprika, cumin, and red pepper flakes.

3. Heat 1 tbsp of the coconut oil in a large skillet over medium-high heat. Add the garlic and saute for about 30 seconds or until it becomes fragrant. Add the 2 turkey patties and cook without touching for about 3 minutes in order to allow them to become crispy on the bottom.

4. Break the patties apart, reduce heat to medium, and add the spice mixture. Stir to incorporate and continue cooking until the meat is cooked through.

5. In the meantime, pulse the cauliflower in a blender or food processor until the pieces are the size of rice. In a large skillet, heat the remaining 2 tbsp coconut oil over medium heat. Add the cauliflower and remaining 1/4 tsp salt. Stir well. Add the chopped almonds and lemon zest and continue to cook, stirring occasionally, for about 5 minutes.

6. Serve the turkey over the cauliflower rice. Garnish with mint if desired.
