Whole Wheat Banana Muffins



Ii you know me, you know I have a sweet tooth!. But throughout my weight loss transformation, one of my biggest takeaways was finding ways to modify recipes so that I could – more or less – have my cake and eat it too! These banana muffins are perfect for those post-lunchtime sweet cravings!

Ingredients
  • ½ cup coconut oil, melted
  • ½ cup honey
  • 1 egg & 2 egg whites
  • 1 teaspoon vanilla
  • 2 cups whole wheat flour
  • 1 ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ¼ cup almond milk
  • ½ cup applesauce
  • 3 mashed bananas
Instructions
  1. Preheat oven to 350. In a large bowl, stir the melted coconut oil and honey. Add eggs and vanilla.
  2. Combine the flour, baking soda, salt, and cinnamon and stir into coconut oil/honey mixture until smooth. Add milk and stir. Fold in the applesauce and mashed bananas.
  3. Spoon mixture into cupcake papers or muffin tin sprayed with non-stick cooking spray. Bake 15-20 minutes.
