Ii you know me, you know I have a sweet tooth!. But
throughout my weight loss transformation, one of my biggest takeaways was finding
ways to modify recipes so that I could – more or less – have my cake and eat it
too! These banana muffins are perfect for those post-lunchtime sweet cravings!

Ingredients
- ½ cup coconut oil, melted
- ½ cup honey
- 1 egg & 2 egg whites
- 1 teaspoon vanilla
- 2 cups whole wheat flour
- 1 ½ tsp baking soda
- ½ tsp salt
- 1 tsp cinnamon
- ¼ cup almond milk
- ½ cup applesauce
- 3 mashed bananas
Instructions
- Preheat oven to 350. In a large bowl, stir the melted coconut oil and honey. Add eggs and vanilla.
- Combine the flour, baking soda, salt, and cinnamon and stir into coconut oil/honey mixture until smooth. Add milk and stir. Fold in the applesauce and mashed bananas.
- Spoon mixture into cupcake papers or muffin tin sprayed with non-stick cooking spray. Bake 15-20 minutes.
