Turkey Parmesan Muffins

This week we were in the mood for something new for our lunches, so I found a great chicken parmesan recipe...and then modified it based on what I was looking for! Keep in mind that you can do the same with the recipe below, substituting the main ingredients and spices for whatever you have on hand or whatever flavors you prefer. But regardless - this one gets a "thumbs up" from both of us!

Ingredients
  • 1lb ground turkey (or chicken)
  • 1 egg
  • 1/2 cup Italian style bread crumbs
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1/2 onion, diced
  • 1tsp Italian seasoning
  • 1/2 cup grated parmesan cheese
  • marinara sauce
  • shredded mozzarella
  • fresh or dried basil


Instructions
  1.  Preheat oven to 350 and spray a 12-count muffin tin with non-stick cooking spray.
  2. In a large mixing bowl, use your hands to mix together the turkey, egg, bread crumbs, garlic, bell pepper, onion, Italian seasoning, and grated parmesan.
  3. Evenly divide the meat mixture among the 12 muffin cups, and make a small indent in the center of each muffin.
  4. Spoon about 1tbsp of marinara sauce into the indent on each muffin.
  5. Bake for 20 minutes (or until turkey is done).
  6. Remove from the oven and top each muffin with a small sprinkle of mozzarella cheese. Return to the oven and bake for an additional 3-5 minutes or until the cheese is melted.
  7. Allow the muffins to cool before removing them from the muffin tin.
