Ingredients
- 1lb ground turkey (or chicken)
- 1 egg
- 1/2 cup Italian style bread crumbs
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1/2 onion, diced
- 1tsp Italian seasoning
- 1/2 cup grated parmesan cheese
- marinara sauce
- shredded mozzarella
- fresh or dried basil
Instructions
- Preheat oven to 350 and spray a 12-count muffin tin with non-stick cooking spray.
- In a large mixing bowl, use your hands to mix together the turkey, egg, bread crumbs, garlic, bell pepper, onion, Italian seasoning, and grated parmesan.
- Evenly divide the meat mixture among the 12 muffin cups, and make a small indent in the center of each muffin.
- Spoon about 1tbsp of marinara sauce into the indent on each muffin.
- Bake for 20 minutes (or until turkey is done).
- Remove from the oven and top each muffin with a small sprinkle of mozzarella cheese. Return to the oven and bake for an additional 3-5 minutes or until the cheese is melted.
- Allow the muffins to cool before removing them from the muffin tin.
