Turkey Base

This is another base starter meal that can be used to kickstart a bunch of different weeknight meal options. You can get creative with the veggies you add to the base or leave it plain and spice it up when you make each individual meal.

Ingredients:

  • 3 lbs ground turkey 
  • 1 cup finely chopped mushrooms
  • 1 cup finely chopped yellow onion
  • 1 hot pepper (jalapeno, banana, poblano), chopped
  • 12 cloves garlic, minced
  • 3 tbsp minced lemongrass
  • 1/3c fresh lime juice
  • 1.5 tsp sea salt
  • black pepper
  • 3 tbsp coconut oil

Instructions:

1. In a large bowl, combine the turkey, mushroom, onion, pepper, garlic, lemongrass, lime juice, sea salt, and black pepper. Mix well to incorporate all ingredients.

2. Heat the coconut oil in a large skillet over medium heat. Add the meat mixture and cook, stirring until the turkey is no longer pink - about 15 minutes. 

3. Divide into 3 3-cup portions.
