Ingredients:
- 3 lbs ground turkey
 - 1 cup finely chopped mushrooms
 - 1 cup finely chopped yellow onion
 - 1 hot pepper (jalapeno, banana, poblano), chopped
 - 12 cloves garlic, minced
 - 3 tbsp minced lemongrass
 - 1/3c fresh lime juice
 - 1.5 tsp sea salt
 - black pepper
 - 3 tbsp coconut oil
 
Instructions:
1. In a large bowl, combine the turkey, mushroom, onion, pepper, garlic, lemongrass, lime juice, sea salt, and black pepper. Mix well to incorporate all ingredients.
2. Heat the coconut oil in a large skillet over medium heat. Add the meat mixture and cook, stirring until the turkey is no longer pink - about 15 minutes. 
3. Divide into 3 3-cup portions.
