Thai Peanut Chicken & Zucchini Noodle Bowl

Surprise surprise, it's another Thai inspired dish. Even if we didn't go on our Honeymoon there, we would still enjoy eating these meals because the flavors are so delicious together.

Ingredients:

  • 3-4 boneless, skinless chicken breasts
  • 1 tbsp oil
  • sea salt
  • black pepper
  • 2-3 medium zucchini, spiralized
  • 1 large red bell pepper, thinly sliced
  • 1/4c cilantro, roughly chopped
  • 1/4c peanuts, roughly chopped
  • Sauce:
    • 1/3c creamy peanut butter
    • 4 tbsp water
    • 4 tbsp soy sauce
    • 1/2tsp sesame oil
    • 2 tsp brown sugar
    • 1/4 tsp crushed red pepper flakes

Instructions:
  • Heat oil in a large skillet over medium high heat.
  • Season chicken on both sides with salt and pepper and add to pan. Cook until browned on each side and transfer to a cutting board to allow to rest.
  • Whisk together all sauce ingredients.
  • Saute zucchini noodles and bell pepper in a skillet, seasoning with salt and pepper if needed.
  • Assemble bowls with zucchini and peppers on the bottom. Dice chicken and put on top of zucchini. Drizzle with sauce and sprinkle with cilantro and peanuts.
