Ingredients:
- 3-4 boneless, skinless chicken breasts
 - 1 tbsp oil
 - sea salt
 - black pepper
 - 2-3 medium zucchini, spiralized
 - 1 large red bell pepper, thinly sliced
 - 1/4c cilantro, roughly chopped
 - 1/4c peanuts, roughly chopped
 - Sauce:
 - 1/3c creamy peanut butter
 - 4 tbsp water
 - 4 tbsp soy sauce
 - 1/2tsp sesame oil
 - 2 tsp brown sugar
 - 1/4 tsp crushed red pepper flakes
 
Instructions:
- Heat oil in a large skillet over medium high heat.
 - Season chicken on both sides with salt and pepper and add to pan. Cook until browned on each side and transfer to a cutting board to allow to rest.
 - Whisk together all sauce ingredients.
 - Saute zucchini noodles and bell pepper in a skillet, seasoning with salt and pepper if needed.
 - Assemble bowls with zucchini and peppers on the bottom. Dice chicken and put on top of zucchini. Drizzle with sauce and sprinkle with cilantro and peanuts.
