- 2c almond flour
- 1c old fashioned oats
- 2tsp cinnamon
- ½ tsp nutmeg
- 1tsp baking soda
- ½ tsp sea salt
- 1/2c raisins, chopped dates, or chocolate chips
- 3 eggs, beaten
- 1c grated zucchini
- 1c grated carrots
- 6tbsp unsalted butter
- 1/2c pure maple syrup
- 1tsp vanilla extract
Instructions:
- Preheat oven to 350 and line 12-16 muffin tins with paper muffin cups.
- Combine the almond flour, oats, cinnamon, nutmeg, baking soda, salt, and raisins/dates/chocolate chips. Set aside.
- In a separate bowl, mix the eggs, zucchini, carrots, butter, syrup, and vanilla.
- Add the dry ingredients to the wet and mix well. Batter will be thick.
- Spoon batter into the muffin cups, filling them to the top.
- Bake for 25-35 minutes or until a toothpick inserted into the middle comes out clean.
