Hearty soups are my go-to in the winter because they are so quick & easy. This soup is not only easy to make, but hearty and perfect for any cold winter night.
Ingredients:
- 1 lb extra lean ground turkey
 - 1 medium onion, chopped
 - 14.5 oz. can diced tomatoes (with optional seasoning if you wish)
 - 15 oz. can tomato sauce
 - 2-3 cups peppers, chopped (red, green yellow, orange - doesn’t matter)
 - 3 cups low sodium beef broth
 - ½ teaspoon basil
 - 1 packet of chili seasoning
 - Additional chili powder, to taste (optional)
 - 1 cup cooked brown rice
 
Instructions:
- Brown ground beef with onion in a skillet over medium heat
 - Drain beef and onions and place in crock pot.
 - Chop peppers, add to crock pot.
 - Add tomatoes (including juice) and remaining ingredients, except rice – which should be added 1 hour before serving.
 - Cover and cook on low for 6-8 hours.
