Stuffed Pepper Soup

Hearty soups are my go-to in the winter because they are so quick & easy. This soup is not only easy to make, but hearty and perfect for any cold winter night.

Ingredients:
  • 1 lb extra lean ground turkey
  • 1 medium onion, chopped
  • 14.5 oz. can diced tomatoes (with optional seasoning if you wish)
  • 15 oz. can tomato sauce
  • 2-3 cups peppers, chopped (red, green yellow, orange - doesn’t matter)
  • 3 cups low sodium beef broth
  • ½ teaspoon basil
  • 1 packet of chili seasoning
  • Additional chili powder, to taste (optional)
  • 1 cup cooked brown rice





Instructions: 

  • Brown ground beef with onion in a skillet over medium heat
  • Drain beef and onions and place in crock pot.
  • Chop peppers, add to crock pot.
  • Add tomatoes (including juice) and remaining ingredients, except rice – which should be added 1 hour before serving.
  • Cover and cook on low for 6-8 hours.
