Steak/Chicken Fajitas



This is one of my go-to recipes when we are working late or have evening activities. I just wake up a little earlier in the morning and marinade the steak or chicken and when I get home, I just have to quickly sautee the meat and veggies, make some rice…and dinner is ready in less than 15 minutes.

Ingredients
  • ¾lb chicken or steak
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 1 garlic clove, minced
  • ½ tsp chili powder
  • ½ tsp cumin
  • ½ tsp hot pepper flakes
  • ½ tsp black pepper
  • ½ tsp salt
Instructions
  1. Mix the marinade ingredients in a ziplock bag and add chicken or steak. Let marinade for at least 2 hours (but I usually let mine go all day).
  2. When you are ready to prepare, heat a large nonstick skillet over medium heat. Add the meat and cook for 5-10 minutes, or until cooked through.
  3. Simultaneously, prepare your desired toppings. I usually use onion and tri colored sweet peppers. Just cook them in a large skillet with a little olive oil until they are translucent (takes about the same time as the meat).
  4. Warm tortilla shells in the microwave, and then assemble with meat, veggies, and other toppings (salsa, sour cream, avocado, etc).
  5. Serve with brown rice or a side of veggies!
