This is one of my go-to recipes when we are working late or have
evening activities. I just wake up a little earlier in the morning and marinade
the steak or chicken and when I get home, I just have to quickly sautee the
meat and veggies, make some rice…and dinner is ready in less than 15 minutes.

Ingredients
- ¾lb chicken or steak
 - 2 tbsp olive oil
 - 1 tbsp lime juice
 - 1 garlic clove, minced
 - ½ tsp chili powder
 - ½ tsp cumin
 - ½ tsp hot pepper flakes
 - ½ tsp black pepper
 - ½ tsp salt
 
Instructions
- Mix the marinade ingredients in a ziplock bag and add chicken or steak. Let marinade for at least 2 hours (but I usually let mine go all day).
 - When you are ready to prepare, heat a large nonstick skillet over medium heat. Add the meat and cook for 5-10 minutes, or until cooked through.
 - Simultaneously, prepare your desired toppings. I usually use onion and tri colored sweet peppers. Just cook them in a large skillet with a little olive oil until they are translucent (takes about the same time as the meat).
 - Warm tortilla shells in the microwave, and then assemble with meat, veggies, and other toppings (salsa, sour cream, avocado, etc).
 - Serve with brown rice or a side of veggies!
