Ingredients:
- 4oz flank steak
- 1/4 tsp paprika
- 1 pinch cumin
- 1 pinch sea salt
- 1 tsp olive oil
- 1 cup chopped raw kale or spinach
- 1/2c cherry tomatoes, halved
- 1/2c chopped jicama
- 1/4 medium avocado
- 1/2c chopped fresh mango
- 1 tbsp chopped pecans
- 2 tbsp Mango Lime Dressing
Instructions:
- Season both sides of the flank steak with paprika, cumin, and salt.
- Heat oil in a skillet and cook the steak for 4-6 minutes or until done. Remove from heat and cover with aluminum foil for about 5 minutes to rest. Slice steak across the grain and set aside.
- Combine kale or spinach, tomatoes, jicama, and avocado in a medium bowl. Top with mango, pecans, and steak.
- Drizzle with dressing.
