Slow Cooker Chicken Fajita Soup

Here is another quick and easy crockpot meal. It makes a lot, but it freezes well so utilize the leftovers for a quick weeknight meal down the road. You can get creative with the toppings you put on it as well.

Ingredients:

  • 1lb boneless, skinless chicken breast
  • 2 (10.7oz) cans condensed cream of chicken soup
  • 1c salsa
  • 2c frozen corn
  • 1 (15oz) can black beans, drained and rinsed
  • 1 1/2c water
  • 1 tsp cumin
  • 1/2 tsp dried cilantro
  • 1c shredded cheddar cheese
  • Optional toppings:
    • sour cream
    • diced tomatoes
    • green onions
    • cilantro
    • lettuce
    • diced avocado
    • tortilla strips


Instructions:
  • Spray slow cooker with cooking spray. Add chicken to the slow cooker.
  • In a medium bowl, mix cream of chicken soup, salsa, corn, black beans, water, cumin, and cilantro. Pour over the top of chicken.
  • Cook on low for 4-6 hours. 
  • Remove the chicken and shred with two forks. Place black into the slow cooker and add shredded cheese.
  • Continue cooking until cheese has melted, about 15 minutes. 
  • Serve with desired toppings.
