Sausage, Broccoli, & Orzo Skillet

I was looking for a new warm lunch option the other day when my sister shared this incredibly simple recipe with me. When she told me it was great for dinner, but even better leftover I knew it would be PERFECT for a make ahead lunch-prep. And so far both my husband and I have given it two thumbs up after we tried it for lunch today!

Ingredients:
  • olive oil
  • 8oz fully cooked chicken sausage
  • 1 package fresh broccoli, chopped into florets
  • salt and pepper, to taste
  • 3 cloves garlic, minced
  • 1 cup orzo pasta
  • 1 1/2 cups low sodium chicken broth
  • 1/2 cup grated parmesan cheese 


Instructions:

1) Heat the oil in a large skillet over medium heat. Add sausage and cook for about 3-5 minutes, or until browned on both sides.

2) Add broccoli and season with salt and pepper. Continue to saute until broccoli is vibrant green, about 5 minutes. 

3) Add garlic and orzo pasta. Stir quickly for about 1 minute to incorporate everything, but also to keep the orzo from burning. 

4) Add chicken broth and bring the mixture to a boil. Cover, reduce the heat to a summer, and cook until the pasta is done and liquid is absorbed, approximately 10-12 minutes. If the pasta is cooked and a lot of liquid remains in the skillet, remove the lid and continue to cook uncovered to let the liquid evaporate. 

5) Stir in parmesan cheese and serve or divide into containers for meal prep.
