Pork Egg Roll in a Bowl

You know I have been obsessed lately with one pan meals because they are such a breeze to make on a busy weeknight! And even easier to clean up after! The flavors in this dish are exactly reminiscent of eating an egg roll, except less messy (in my opinion). This one will be on the menu rotation for sure!

Ingredients:

  • 2 tbsp sesame oil
  • 3 cloves garlic, minced
  • 1/2 cup onion, diced
  • 5 green onions, green and white parts, sliced
  • 1 lb ground pork
  • 1/2 tsp ground ginger
  • sea salt to taste
  • black pepper to taste
  • 1 tbsp Sriracha sauce
  • 14oz bag coleslaw
  • 3 tbsp coconut aminos
  • 1 tbsp rice wine vinegar




Instructions:

1. Heat the sesame oil in a large skillet over medium high heat.

2. Add the garlic, onion, and white portion of the green onions. Saute until the onions are translucent.

3. Add the pork, ginger, salt, pepper, and Sriracha. Continue to saute everything until the pork is cooked through.

4. Add the coleslaw, coconut aminos, and rice wine vinegar. Continue to cook everything until the coleslaw is tender, about 5-7 minutes.
