Marinated Summer Veggies with Chicken Sausage

If you want a dish that both looks AND smells like summer - then look no further! This is another one pan meal (which you all know I love) and it was requested that it be added to our regular rotation... the ultimate new recipe compliment! You could really get creative with this recipe and include any fresh veggies of your choice. I don't think you can go wrong!


Ingredients:
  • 2 tsp olive oil
  • 2 tbsp balsamic vinegar
  • 2 tbsp fresh lime juice
  • 2 cloves garlic, minced
  • sea salt (to taste)
  • black pepper (to taste)
  • 1 lb green beans, ends removed
  • 2 medium zucchini, chopped
  • 2 medium summer squash, chopped
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, sliced
  • 1 medium red onion, sliced
  • 4 cooked chicken sausages, sliced
  • fresh basil




Instructions:

1) Make the marinade by mixing olive oil, balsamic vinegar, lime juice, garlic, salt and pepper in a small bowl. Set aside.

2) Chop the veggies: green beans, zucchini, summer squash, cherry tomatoes, bell pepper, and onion. Place them in a large ziplock bag. Pour marinade over the veggies. Seal tightly and shake to coat. Let sit for at least 30 minutes.

3) You can cook the veggies & sausage however you like - grill, broiler, stove top skillet. No matter which method, just cook until the veggies are done to your liking.

4) Sprinkle with fresh basil before serving (optional, but HIGHLY recommended)
