This dish is another super easy one that is great for hectic evenings.
As a bonus, you can get creative according to your taste preferences. It’s
pretty much a one dish meal too.

Ingredients
- 4 boneless, skinless chicken breasts
 - hummus (any variety)
 - paprika
 - veggies (I like carrot, broccoli, cauliflower, and onion…but get creative)
 - garlic
 - olive oil
 
Instructions
- Preheat oven to 400 degrees.
 - Chop the veggies you’re going to use and spread them in the bottom of a glass baking dish. Season however you like…I use olive oil and garlic. Make sure the veggies are coated well.
 - Place chicken breasts on top of the veggies. Spread hummus on top of chicken. Sprinkle a little paprika over the hummus.
 - Bake for 30 minutes or until chicken is cooked and veggies are roasted.
