Hummus Crusted Chicken



This dish is another super easy one that is great for hectic evenings. As a bonus, you can get creative according to your taste preferences. It’s pretty much a one dish meal too.

Cook time:  30 mins
Total time:  40 mins




Ingredients
  • 4 boneless, skinless chicken breasts
  • hummus (any variety)
  • paprika
  • veggies (I like carrot, broccoli, cauliflower, and onion…but get creative)
  • garlic
  • olive oil
Instructions
  1. Preheat oven to 400 degrees.
  2. Chop the veggies you’re going to use and spread them in the bottom of a glass baking dish. Season however you like…I use olive oil and garlic. Make sure the veggies are coated well.
  3. Place chicken breasts on top of the veggies. Spread hummus on top of chicken. Sprinkle a little paprika over the hummus.
  4. Bake for 30 minutes or until chicken is cooked and veggies are roasted.
