- 3 cups old fashioned oats
- 2-4 tablespoons ground flax seed or chia seeds
- 1 cup plus 1 tablespoon all natural peanut butter (chunky or creamy)
- 1 cup + 1 tablespoon honey

- 1/2 cup shredded coconut
- 1/4 cup chopped almonds, walnuts, or cashews
Instructions:
- For extra smooth granola bars, put the peanut butter and honey into a pot and heat it on low until it melts together.
- Chop the nuts, if you’re using them.
- Pour peanut butter, honey, oats, your flax/chia seeds and your extras into a bowl and mix them well. This is much easier with a stand mixer.
- Grab a 9×9 pan and spray it with non-stick cooking spray.
- Pour the granola bar mixture onto the parchment paper.
- Using a piece of parchment or wax paper, spread the bars out into the pan (this is a thick batter, so they won’t just naturally take the shape of the pan - you have to “mold” them a bit).
- Let sit for at least an hour and then cut into 8 bars.
