Salmon is my favorite fish, hands down. And this recipe sounded like a flavorful and delicious way to spice up my favorite fish. Although we were skeptical about the cold salsa on top of the warm fish, it TOTALLY works!

- 2 Salmon filets
- Olive oil
- 2 tbsp brown sugar
- 1 tbsp chili powder
- ½ tsp cumin
- Black pepper
- Salt
- Avocado
- Cherry tomatoes, chopped
- Juice of 1 lime
Instructions:
- Preheat the oven to 425.
- Rinse salmon and pat dry. Brush with olive oil.
- Combine brown sugar, chili powder, cumin, black pepper, and salt. Spread generously over both sides of the salmon.
- Heat a little oil in a pan over medium high heat. Cook the salmon for 3-4 minutes/side (depending on thickness). Then transfer the salmon to a baking sheet lined with parchment paper and finish cooking in the oven for about 10-12 minutes.
- While the salmon is baking, combine avocado, tomatoes, and lime juice.
- Top the salmon with salsa when it comes out of the oven.
