Ingredients:
- 2 tbsp cooking fat
- 1lb boneless, skinless chicken breast, cubed
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4c chopped walnuts
- 1 sweet potato, grated (or diced)
- 1 granny smith apple, cored and diced
- 1/2 tsp red pepper flakes
- 1/4c chicken broth
- 2 generous handfuls of baby spinach
Instructions:
1. In a large skillet, heat the cooking fat over medium high heat. When the pan is hot and the fat is melted, add chicken and sprinkle with salt and pepper. Brown for 2-3 minutes.
2. Add the walnuts and continue cooking until the chicken is cooked and the walnuts are toasted. (be sure not to burn the walnuts)
3. Add the sweet potato, apple, and red pepper flakes and cook until the chicken and veggies are fully cooked.
4. Add the chicken broth and mix all of the ingredients together, making sure to scrape any bits off of the bottom of the pan.
5. Add the spinach and cook for about 1 minute longer to wilt the spinach. Serve immediately.
