Chicken, Apple & Sweet Potato Hash

This meal is almost too easy to even call cooking! One pot is all you need and it is quick enough to plan for a busy weeknight meal.

Ingredients:

  • 2 tbsp cooking fat
  • 1lb boneless, skinless chicken breast
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4c chopped walnuts
  • 1 sweet potato, peeled and grated
  • 1 granny smith apple, peeled and diced
  • 1/2 tsp red pepper flakes
  • 1/4c apple cider (or chicken broth)
  • 2 handfuls of baby spinach






Instructions:

  • In a large skillet heat the cooking fat over medium high heat. When the fat is hot, add the chicken. Season with salt and pepper and cook until browned (2-3 minutes)
  • Add the walnuts and cook until chicken is fully cooked and walnuts are toasted.
  • Add sweet potato, apple, and red pepper flakes and cook, stirring often until all items are cooked. 
  • Add the apple cider (or chicken broth) and mix all the ingredients together. 
  • Add the spinach and cook for 30 seconds or until spinach is wilted.
  • Serve immediately.
