I’ve never met a piece of pizza I didn’t love. And with my recent push
to incorporate more veggies into my diet and also make more of my own food at
home, I couldn’t help but be intrigued when I came across this recipe. I
figured there was no way it could work (or taste good) but I was too curious
not to try. Although this recipe is a little more on the time-consuming side,
it is well worth the work! This has become a staple in our house and it is
ideal for satisfying any pizza craving!

Cook time: 40 mins
Total time: 1 hour
Ingredients
- 1 head cauliflower, cut into florets
- ½ cup grated Parmesean cheese
- 1 ½ cup shredded mozzarella cheese
- 1 egg
- ½ tsp oregano
- ½ tsp basil
- ½ tsp garlic powder
- ¼ tsp red pepper flakes
Instructions
- Preheat oven to 450 degrees. Spray a cookie sheet with nonstick spray.
- Boil/steam the cauliflower until it is easily stabbed with a fork. Drain and transfer to a food processor. Process until smooth.
- Transfer the cauliflower onto a tea towel and ring dry (very important!!….yes, you will burn your fingers initially, but continue to ring until almost no water drips out of the towel).
- Put dried cauliflower puree into a large bowl and combine with cheeses, egg, and spices.
- Spread mixture onto the prepared baking sheet and form into a circle (or square or whatever shape you desire). Bake for about 20 minutes until the crust begins to brown.
- Remove from the oven and put desired sauce, additional toppings (pictured above I used turkey sausage, red & yellow bell peppers and banana peppers), and additional cheese on the crust.
- Put back into the oven and bake for another 15-20 minutes or until the cheese is melted and the toppings are heated through.
- Let sit for 5 minutes to cool. Slice and enjoy!
