Bacon and Brussels Sprout Wild Rice with Fried Eggs

I will admit that I was hesitant to try this recipe because let's be honest - I want my protein to come from MEAT at dinner lol. But I really loved the sounds of everything else in this one, so I figured I would give it a shot. Turns out the risk paid off and this recipe got the ultimate high score from my husband and I loved it too. Needless to say, this one will be making an appearance on future menus!

Ingredients:
  • 1 cup wild rice
  • 6-8 slices bacon, diced
  • Brussels sprouts (I use one package, but don't know how many cups that equaled so you can use your judgement for how many you want)
  • 4 cloves garlic, minced
  • 4 green onions, (green part only), sliced
  • soy sauce (optional)
  • 2-4 eggs (depending if you want 1 or 2 per person)



Instructions:

1. Cook the rice according to the instructions on the package. (tip: I cook mine in low sodium chicken broth instead of water for extra flavor)

2.  In a large skillet, cook the bacon until crispy. Stir in Brussels sprouts and continue cooking until they soften and start to brown on the edges. Add garlic. Remove from heat if fully cooked before rice is finished.

3. When rice is done cooking, add it to the skillet with bacon and Brussels. Add green onions and a splash of soy sauce (if desired) and stir everything to incorporate well. Keep warm while you prepare the eggs.

4. In a separate skillet cook your eggs to your desired liking.

5. Serve by plating the bacon, Brussels, and rice and topping with the egg(s).
